1/2 cup sliced leeks 1/2 red pepper, chopped 1/2 cup grated green cabbage 1/8 cup chopped green or black olives |
1/2 cup grated carrots 4 large radishes, sliced, and sliced in half again 1/2 cucumber, unpeeled and sliced thin |
Mix these together in a bowl. Set aside.
| Gelatin Ingredients: 1 pkg unflavored gelatin 1 cup vegetable broth 1 Tbl salad vinegar + 1 tsp sugarless spice blend + enough cold vegetable broth to make 1 cup |
Gelatin Preparation: Bring first cup of vegetable broth to a boil. Pour into a gelling container and stir in the gelatin until dissolved. Stir in the cold broth mixture. Refrigerate. Halfway through gelling add vegetables. Return to refrigerator to set. |
